Introduction
About this Recipe

Do you get those chocolate cravings after dinner or mid-afternoon? These little balls keep for ages in the fridge, and believe me when I say they are delicious. They have just the right amount of sweetness, crunch, and richness to satisfy the chocolate urges without too much guilt.
Almonds for good fats, protein, and fiber. Cacao for the anti-oxidant hit. Collagen helps with healthy bones, joints, and beautiful hair and nails, plus dates for better digestion, higher energy levels, enhanced brain function, and supporting bone health.
They are very easy to make, enjoy.

Ingredients
2 cups dates with pips removed
1/2 cup cacao powder
1 cup desiccated coconut
1 cup of raw almonds
1/4 cup plus 2 tablespoons coconut milk
1/4 teaspoon Himalayan salt
2 scoops collagen powder which is approximately 2 tablespoons
1 cup of dark chocolate 70% for dipping afterwards this is optional

Step by Step Instructions
Step 1
Add all the ingredients to a food processor and blend. This can be a bumpy ride as the almonds and dates break down. You can add a teaspoon of water if you feel your mixture is too dry. The mixture should be sticky and easy to roll into balls and not runny.
Step 2
Tip the mixture out into a new bowl, begin taking about 24g out at a time, and roll into small tight balls. I like to weigh them so they come out in a similar shape. Pop them onto a tray with nonstick baking paper. Once they are all rolled out put the whole tray in the fridge for about 15 minutes or the freezer for 10 minutes.
Step 3
Melt the dark chocolate (not boiling) and when the balls have chilled dip them in the melted chocolate. It’s a messy yummy business. Before the chocolate dries sprinkle them with some desiccated coconut or chopped almonds.
Store in an airtight container for up to 4 weeks in the fridge, if they last that long.

Almond, cacao & collagen energy balls
- Total Time: 30 minutes
- Yield: 20 balls depending on size 1x
- Diet: Gluten Free
Description
Little balls of deliciousness packed full of antioxidant ingredients. They take 30 minutes to pull together and keep in the fridge for 2 weeks. Why buy junk when you can have these little nibbles for a chocolate hit?
Ingredients
2 cups of dates pips removed
1/2 cup Cacao powder
1 cup desiccated coconut
1 cup of raw almonds
1/4 cup plus 2 tablespoons coconut milk
1/4 teaspoon Himalayan salt
2 scoops of collagen powder – approx 2 tablespoons
1 cup 70% dark chocolate for melting and dipping, this is optional as you can just roll them in more cacao powder
Instructions
Add all the ingredients to a food processor and blend. It can be a bumpy ride until the nuts and dates have broken down. You can add a teaspoon of water if it’s a bit dry. It should be sticky but definitely not runny or too wet as you need to be able to roll them and they must hold their shape. Roll into balls of your desired size, I made them each around 24g. Lay them on a tray covered with baking paper to prevent sticking and pop in the fridge for about 30 minutes or the freezer for 10 minutes. Melt your chocolate in the meantime. Dip them in the chocolate when they are chilled. I just dipped half. It gets messy. While the chocolate is still wet sprinkle with extra coconut or nuts – optional. Store in an airtight tupperware in the fridge for as long as they last
