Description
Little balls of deliciousness packed full of antioxidant ingredients. They take 30 minutes to pull together and keep in the fridge for 2 weeks. Why buy junk when you can have these little nibbles for a chocolate hit?
Ingredients
2 cups of dates pips removed
1/2 cup Cacao powder
1 cup desiccated coconut
1 cup of raw almonds
1/4 cup plus 2 tablespoons coconut milk
1/4 teaspoon Himalayan salt
2 scoops of collagen powder – approx 2 tablespoons
1 cup 70% dark chocolate for melting and dipping, this is optional as you can just roll them in more cacao powder
Instructions
Add all the ingredients to a food processor and blend. It can be a bumpy ride until the nuts and dates have broken down. You can add a teaspoon of water if it’s a bit dry. It should be sticky but definitely not runny or too wet as you need to be able to roll them and they must hold their shape. Roll into balls of your desired size, I made them each around 24g. Lay them on a tray covered with baking paper to prevent sticking and pop in the fridge for about 30 minutes or the freezer for 10 minutes. Melt your chocolate in the meantime. Dip them in the chocolate when they are chilled. I just dipped half. It gets messy. While the chocolate is still wet sprinkle with extra coconut or nuts – optional. Store in an airtight tupperware in the fridge for as long as they last
