I know I’m a bit obsessed about making healthy chocolates at the moment, but these are worth the effort.

They taste like a Ferrero Rocher without all the drama of too much refined sugar.

Dates are high in sugar, but do have the benefit of having a lot of fibre, so they help with digestion, are good for brain health, and have antioxidant properties.

The wonderful thing about these nibbles is one or two is enough as they are rich, so there is little chance of overdoing it. Just make sure to have them after a good healthy meal so as not to spike your blood sugars.

Ingredients

  • 2 cups of pitted dates
  • 1/4 cup Pumpkin seeds – optional
  • 1 cup toasted hazelnuts
  • 2 tablespoons cacao powder
  • 2 tablespoons almond butter
  • 4 – 5 tablespoons water
  • 1 cup dark chocolate melted for dipping
  • 20 whole hazelnuts for the centres of each ball

Step by Step Instructions

Step 1

Place all the ingredients in a food processor without the water and blend. Add the water tablespoon by tablespoon as needed if the mixture won’t blend. This can be because the dates are too dry. Blend until the nuts have broken down and the mixture is dough-like. 

Step 2

Transfer the mixture to a bowl and roll into 25g balls, pushing a hazelnut into each centre.

Step 4

​Pop these onto a nonstick tray and chill in the fridge for about 30 minutes.

Melt the chocolate and dip each ball into the chocolate and sprinkle with some chopped hazelnuts. 

Step 5

Chill in the fridge again and pop into a tupperware. Store in the fridge.

They will keep for about 6 weeks quite happily if they last that long.
