Introduction
About this Recipe
By: Amanda Higgins
I love jam but with the high sugar content most store-bought jams have it’s not worth the money or health drama attached. I have been playing around with healthy granola recipes and thought a delicious addition would be a protein-rich jam. Berries are packed with fibre and antioxidants and chia seeds are a valuable source of protein, fibre, and all-around goodness.
This jam is so simple to make and is delicious too.

Ingredients
2 cups of berries – I used strawberries, blackberries, and a handful of blueberries. It’s a great way to use up berries which are a little tired
Splash of water
Juice of 1/2 lemon and the zest
2 Tablespoons of chia seeds
1 tablespoon maple syrup – adjust to taste if berries are very sweet. I like the jam tart
A sterilised glass jar

Step by Step Instructions
Step 1
Pop the washed berries into a pot with a splash of water and simmer till the fruit has all broken down.
Take a potato masher and mash them up till they’re not whole fruit. Stir in the chia seeds, lemon juice and zest, and the maple to taste.
Step 2
Allow this to cool.
Step 4
Add to the sterilized jar and store in the fridge. It will keep for 2 weeks.
Serve this on hot oats, overnight oats, pancakes, toast, yogurt, and granola, or simply grab a spoon for an antioxidant hit.

Description
This delicious jam is packed with antioxidants, which help keep your cells clean and working well. It’s amazing on a piece of toast, added to oats in the morning, or added to your yogurt. A jam with only a tablespoon of maple is a jam I’m happy to eat.
