Oat pancakes/crepes
These pancakes are very simple to make and they have no egg, dairy, or gluten in them (as long as you use gluten free oat flour) They have a lovely nutty flavour and can be filled with anything from chocolate spread to fresh or stewed fruit. I have filled them with steamed apple pieces and a homemade apple sauce or as we like to call it ‘apple custard.’

An utterly simple way of making a crepe. You will need a high speed blender to create this batter. Oats, flax seeds and milk of your choice blended together to make a nutty wholesome breakfast treat.
Oats also contain fiber which is great for digestive health. If you have any chronic constipation issues, consuming oats every morning will be very beneficial. Combine this with flax seeds, a tiny seed rich in the omega-3 fatty acid ALA, lignans and fiber, these crepes have many potential health benefits.
Ingredients
1 cup of oats
2 tablespoons of flaxseeds
1½ cups of milk of your choice ( coconut, almond, cows milk)
½ teaspoon of cinnamon
Step by Step Instructions
Step 1
Blend all of the following together. I use my NutriBullet but any good blender will do the trick.
Step 2
Heat a frying pan with a tiny little bit of coconut oil and pour in enough batter to make a round pancake. These babies take a little longer to cook then your standard pancake. Flip over when cooked and let it cook nicely on the other side.
Step 3
I filled these with stewed apple and apple butter, a drizzle of maple syrup and a sprinkle of cinnamon. Delicious.
