Did you know that dark chocolate has health benefits?
Dark chocolate is loaded with nutrients that can affect your health positively. It is made from the seed of the cocoa tree and it is one of the best sources of antioxidants on the planet. Studies show that dark chocolate (not the sugary crap) can improve your health and lower the risk of heart disease if eaten in moderation of course.
These lovely little bites have all the chocolate goodness with all the crunch we crave when looking for a nibble to have as a treat.
Ingredients
¼ cup of coconut oil
2 tablespoons maple syrup
1 tablespoon honey
¼ cup of cocoa powder
2 cups of rice crispies or puffed rice (use gluten free if necessary)
½ cup desiccated coconut
50g 71% dark chocolate
¼ cup dark chocolate nibs – optional
Step by Step Instructions
Step 1
Combine the coconut oil, maple syrup and the chocolate; melt slowly in a saucepan. Using a whisk, add the cocoa powder and mix until lovely and glossy.
Step 2
Add the rice crispies, coconut and the nibs; mix until all are nicely coated and combined.
Step 3
Line a 22cm x 22cm tin with cling film and press the mix into the dish. I like to lay a cloth onto the top and press very hard with the palm of my hand until the crackles are all firmly pressed down.
Step 4
Pop this into the freezer for about 30 minutes to harden before cutting up into squares
Step 5
- Store in the fridge if warm or an airtight container.
