This granola was inspired and adapted from a recipe by Jasmine Tyler on YouTube. My daughter found it and started making it as she is vegan. I have decided it is too good not to share, as it so easy and delicious.
We have ours with a wonderful coconut vanilla yogurt we get here in the UK and top it with some berries. My daughter makes a delicious Nicecream with frozen banana and pops a handful of this delicious granola on top. I will have to steal that recipe and add it for everyone to try. It looks and taste amazing.
Keep a jar of this in the cupboard for a guilt free cereal.
Ingredients
- 3 cups of oats ( gluten free if GF)
- 1/3 cup of cocoa powder
- 1/2 cup maple sugar
- 1/4 cup coconut oil
- 1/2 cup almond butter
- 1/2 cup chopped pecan nuts
- 1/3 cup desiccated coconut
Step by Step Instructions
Step 1
Preheat the oven to 200˚C and grease a baking tin 30x20cm.
Combine all the dry ingredients in a large bowl and give it a good stir.
Step 2
Melt the coconut in the microwave or on the stove top in a pot. Add the almond butter and the maple syrup to this and mix well.
Step 3
Combine the wet ingredients with the dry ingredients using a spoon or mix with your hands until well combined. Press this into the greased baking tin using a spoon and pat it down.
Step 4
Bake in the oven for 15/20 minutes until the edges go a little brown. Be careful not to burn it. Remove from the oven and allow it to cool.
Step 5
Once cooled carefully break it up. It is nice to have some chunks, as well as some loose bits. Fill up a tupperware or glass jar and it will keep for a few weeks.
Use as you would a normal granola.

My daughter is vegan and keeps a big glass jar of this for morning breakfast or as a snack during the day. It is delicious mixed with coconut yogurt and topped with some berries. She makes a delicious berry Nicecream with frozen bananas and pops a big handful of this on top.
Ingredients
3 cups of oats (gluten free if you are GF)
1/3 cup cocoa powder
1/2 cup maple sugar
1/4 cup coconut oil
1/2 cup almond butter
1/2 cup chopped pecan nuts
1/3 cup desiccated coconut

Fill up a tupperware or glass jar and will keep for a few weeks.
Use as you would a normal granola.
